Hello, I am Roberto, the head waiter at the Rezia Restaurant and if you ever dined with us, here in the centre of Bormio, I will almost certainly had recommended a traditional Valtellina wine to you.
I have worked at the Rezia for years, looking after the Bar and the Stube. Every day, I try to share my passion and enthusiasm with my guests and the young staff who work with me. I often find myself talking about the history of a dish, a wine or telling guests about a walk in these mountains where I was born.
What is my aim at the Rezia Restaurant?
Without doubt, I want to give you the complete experience and leave you keen to come back to Bormio and hopefully to our hotel for a superb meal in the centre of Bormio.
IFor me, the Rezia has always been my home and I want you to feel like you are at home as soon as you arrive. Nature always puts on a show, whether it is the pure white of the snow in winter or the lush, verdant green of summer.
Valtellina Wines in the Rezia Restaurant Cellar
I want to tell you a bit about my passion: the wines of the Valtellina! During this enforced break at "my" Rezia, I set about creating a small cellar of Italian bottles, particularly local ones. There are so many different aspects to wine, you can enjoy it just for its colour and aroma, or perhaps for its history and the stories of the passionate people who produce it.
In our cellar you will find several Italian wines, among all the Valtellinesi certainly stand out from Grumello to Sassella and from Valtellina Superiore Inferno DOCG to Sforzat or "Sfurzat" as it is commonly called here. The term "sfurzat" derives from forcing or prolonging the ripening of the grapes. The noblest of the Valtellinesi wines, the first to have had the denomination of controlled origin, ideal to accompany our typical dishes such as pizzoccheri, salami or game.
Until I was 30, I didn't drink at all, now I drink wine to taste it, to help me with the tricky task of finding the right match between my customers’ requests and the fruit of the winemakers’ labours. In the cellar at the Hotel Rezia, you can find the right bottle for any dish that you order and I will also be on hand to advise you in case you are unsure which wine to go for.
One time, I was asked which wine I liked best...
I replied that no such wine exists, it cannot exist, because it depends on the moment. For example, at home I often drink sparkling wine but there is a different wine for any moment of the day, or of life. The wine which has always given me the most satisfaction is a limited edition rosé made by a vineyard in the Valtellina. It has a unique and intoxicating flavour, one which stayed with me and enhanced the special moment I was enjoying.
One song you could listen to when drinking this wine would be La Vie En Rose by Louis Armstrong.
I am always moved whenever I taste it, for me it is a moment of consciousness. I have tasted some very special and refined wines but what interests me most and what gives me most pleasure is the story that the wine itself has to tell. Every wine has its own story, to discover and to taste.
For me, wine is something emotional, to share and enjoy.
My secret dream?
I don’t know, I don’t really have dreams, I have ideas instead, like planting some verdicchio vines in Loria. I always try to do something I enjoy, that is the best way for me to share my passions, such as my passion for wine!
